24. Green Tomato Jam

I have gathered together all the remaining green and unripe tomatoes, and will use them to make green tomato marmalade. This is a first for me, both cooking and tasting it. Iā€™m curious to see how it turns out.

I have used an Antonio Carluccio recipe for this. It combines the tomatoes and lemon to create a sharp, fresh tasting jam that is similar to a marmalade, but much more subtle tasting. It takes longer than you think to reach the setting point, but be patient and it will happen. An unusual taste, but delicious.
